Responsibilities

  • Organize shifting in the section with regards to mis-en-place production and its service
  • Assist the Sous Chef in the supervision of all colleagues engaged in the kitchen
  • Attend daily meetings with Sous Chef and all other Senior Chefs regarding the updates for the day and reviews the list of things to do for maximum 2 days thereafter
  • Check any spoilage and ensure regular turnover of food items and inform the Sous Chef
  • Check on a daily basis food preparation, individual costs, quality, quantity inventories, and portion control
  • Keep the section clean and tidy
  • Create an internal operating process to ensure food is always consistent and makes tools available to the line colleagues for implementing consistency within the system
  • Liaison with purchasing department to ensure all the items used in the kitchen are of the best quality and always opt to bring new ingredients or better-quality produce
  • Maintain record and follow-up documentation, and checklists for control purposes
  • Ensure all the HACCP regulations are followed, and documentation is up to date as per requirement, ready for all hygiene audits at any given point in time
